Cooking has its rewards. Families that eat together, stay together. Food plays an important role in my family. I believe that cooking good meals are an investment in my children's health. When we eat toguether we accomplish two important elements: nourishment of the body and nurturing of the family. I'm always learning to cook foods from different countries. Serving a variety of foods at my table from several cultures have given me the opportunity to teach my kids about other countries. Food can be a delightful experience that unify and encourage the family to comunicate with each other. From time to time I will post articles and pictures from different parts of the Land of the Incas. In several occasions I've been invited by schools from Pocatello and Blackfoot to teach children about Peru. I want kids to understand that each Latin American country is different and unique. Because all of them speak Spanish they are not the same. Read my articles and view the pictures of some parts of Peru. They may be helpful for your kid's school projects. Elba's Spicy Mojo Chipotle Chicken Wings
3 lbs. of chicken wings
3 Tbs. of Mojo Chipotle Marinade
5 or more Tbs. of Red Devil hot sauce
1 package of Italian Dressing mix
Wash chicken wings and remove ends, cut in half.  Add marinade, hot sauce, and Italian dressing mix.  Mix well and marinate for 30 minutes or overnight.  When ready to cook, heat oven at 400 F degrees.  Place wings in a cookie sheet and cover with remained marinate sauce.  Bake for 1 hour.  Turn them over after first 30 minutes of cooking and continue cooking for 30 minutes more.  Enjoy them!

Thanks for the great idea for chicken wings.  It sound yummy!  Here is a really great way to created a fast, easy and devine Mexican Pork Salad - hope you will enjoy it! 

 1 pound boneless pork loin, cut into 3 x 1/2 x 1/4
 inch strips
 4 cups shredded lettuce
 1 medium orange. peeled, sliced and quartered
 1 medium avocado, peeled, seeded, and diced
 1 small red onion, sliced and separated into rings
 1 tablespoon oil
 1 teaspoon chili powder
 3/4 teaspoon salt
 1/2 teaspoon dried oregano leaves, crushed
 1/4 teaspoon ground cumin

Place lettuce on serving platter. Arrange orange, avocado and red onion over lettuce. Heat oil in large frying pan; add chili powder, salt, oregano and cumin. Add pork loin strips and stir-fry over medium-high heat 5 - 7  minutes or until pork is tender. Spoon hot pork strips over lettuce mixture.
Serve immediately.
